When did you first become interested in cooking? Why did you decide to pursue a culinary career?
I love food. Ever since I was little, I always enjoyed helping my mother out in the kitchen. That way, I could taste the food. My mother’s food was the best. I studied at The Culinary Institute of America (CIA) which is an American culinary college located in Hyde Park, New York.

Who have been the biggest inspirations for your career?
Nobuyuki “Nobu” Matsuhisa is a celebrity chef and restaurateur known for his fusion cuisine blending traditional Japanese dishes with South American (Peruvian) ingredients. His signature dish is black cod in miso.

Dish on the menu your curious to see how it’s received?
Horseradish crusted salmon with lobster & leek champagne sauce.

What do you do to insure the quality of the food going out to customers?
I inspect every dish before it leaves the kitchen and I select locally grown food and ingredients.

If any chef in the world could prepare you a meal, who would it, be?
Michel Roux, is a French-born chef and restaurateur working in Britain.

What’s your guilty food pleasure?
Korean Noodles – the kind that come in the package.
