Grandma’s Favorite Pumpkin Cookies Recipe
This pumpkin cookie recipe is Grandma’s favorite. It’s our favorite, too! Every Fall the kids look forward to Grandma’s visit. She brings us a whole container of fresh-baked pumpkin cookies. During her visit, she set out a plate of these cookies and they quickly disappear. Then, a few weeks later, we are rewarded with another visit from Grandma and more of these mouth-watering, seasonal goodies. It’s one of the things that makes us look forward to going “over the river and through the woods…”
This is a moist cookie recipe. We don’t think there’s a better pumpkin cookie recipe than this one.
Ingredients
Directions
Preheat oven to 375° F.
Cream shortening and sugar.
Mix in pumpkin, egg, and molasses.
Stir in dry ingredients, spices and raisins.
Drop cookie batter, by the spoonful, onto an ungreased baking sheet.
Bake cookies for 10 to 12 minutes.
Serving Tips and Suggestions:
These cookies undeniably taste best with a cold glass of milk. They also go well with a glass of cider or hot chocolate.
Fried Pumpkin Slices
As pumpkins ripen in the field, it’s time to search out tasty, new, and different pumpkin recipes. Usually, we think of baked pumpkin recipes. However, this fried pumpkin slices recipe certainly is a little different. In this recipe, we’re using it as a vegetable. And a pretty tasty vegetable at that. Undoubtedly, you should try it this Fall. You’ll be glad that you did.
Ingredients
Here are the fried pumpkin slices ingredients:
1 ripe pumpkin
2 eggs, beaten
1 Tablespoon milk
1/2 cup flour
2 Tablespoons sugar
1/2 teaspoon cinnamon
vegetable oil
Directions
Clean out the insides of the pumpkin.
Halve the pumpkin lengthwise and peel.
Cut the pulp into 1/4-inch slices.
In a bowl, beat together eggs and milk.
In a separate bowl, mix flour, sugar and cinnamon.
Heat vegetable oil in a frying pan.
Dip pumpkin slices into the egg, then the flour mixture and fry in vegetable oil until browned, turning once. Serve the fried pumpkin slices hot.
